Slow Cooker Chicken Cacciatore

 

INGREDIENTS (serves 6)

  • 900g chicken thighs, bone-in

  • 1 tbsp olive oil

  • 200g onions, peeled and chopped into chunks

  • 4 cloves of garlic

  • 400g tinned tomatoes

  • 100g tomato paste or puree

  • 250g mushrooms, chopped into medium chunks

  • 250g carrots, peeled and chopped into chunks

  • 75g olives, drained and chopped a little

  • 1 tbsp dried oregano

  • 2 tbsp sundried tomato paste (optional)

  • Salt and pepper

  • 30g fresh basil

 

RECIPE

  1. Brown the chicken thighs in a frying pan with hot oil (or in your slow cooker if it’s suitable for browning)

  2. Add everything except the basil into the slow cooker and cook on HIGH for 3-4 hours or LOW for 4-6 hours

  3. Garnish with fresh basil and serve with rice, potatoes or crusty bread.
